Oatmeal Applesauce breakfast cookie

 

Applesauce Oatmeal-Raisin Cookies 

This recipe serves:  24  These are a great replacement for a breakfast bar.

 

 

Ingredients:

vegetable cooking spray
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup brown Splenda

1 tsp vanilla extract
½ cup unsweetened applesauce
1/2 cup egg substitute
2 cups rolled oats
1/2 cup raisins & 1 pkg craisins and dried blueberries, most dried fruits work.

¼ cup almonds

 

Cooking Instructions:

1. Heat the oven to 375°F. Lightly spray two baking sheets with the cooking spray.

2. In a large bowl combine the flour, baking powder, baking soda and salt.

3. In a bowl cream using electric mixer the Splenda together with the egg for about 1 minute then add, vanilla and applesauce. Beat until smooth, about 2 minutes.  Add the flour to the applesauce mixture.

4. Stir in the oats, raisins, craisins and almonds.  Dough should be consistency of regular cookie dough, if it isn’t add more oats.

5. Drop rounded teaspoonfuls onto the prepared baking sheets about two inches apart try to flatten them down a little bit.

6. Bake until slightly golden, about 10 to 12 minutes.
